This delicious asparagus soup recipe is so easy to make!

Ingredients
2lbsasparaguswashed, woody stems removed and cut into 2 inch pieces
1white or yellow oniondiced
2clovesgarlicminced
salt and pepperto season
2 1/4cupchicken broth
1/2cupheavy creamor dairy-free substitute such as almond milk, if sensitive to dairy
1tsplemon juice
Instructions
Place all ingredients in crock pot EXCEPT heavy cream and lemon juice.
Cover and cook on high for 3-4 hours.
When asparagus and onions are very tender, remove lid and blend soup using an immersion blender (you can also use a blender but be careful using it with hot soup).
Stir in heavy cream and lemon juice. Serve!
Notes
Make sure you remove all the woody stems from the asparagus and try to choose young and tender asparagus. Otherwise, you may end up with strings in your soup - You can strain through a mesh sieve if this happens.
