Ingredients
2
cups
Old-fashioned oats
or quick oats, either will work
1/2
tsp
ground cinnamon
1/2
tsp
salt
1/2
tsp
baking powder
1
cup
mashed ripe banana
(about 2-3 medium)
1/2
cup
Sugar-free almond butter
or nut butter of your choice
1
tbsp
raw honey
or maple syrup
1
tsp
pure vanilla extract
1/4
cup
chocolate chips
Instructions
Preheat oven to 350°F. Line half sheet baking sheet with parchment paper or silicone mat.
Mix oats, baking soda, baking powder and cinnamon together in a bowl.
Add remaining ingredients and stir with a wooden spoon (or similar) until well combined, working all ingredients throughout.
Drop about 1/4 cup of dough at a time onto a baking sheet. This recipe should fit 12 perfectly onto one half sheet.
Shape cookies - they will not poof or flatten during cooking so shape how you want them.
Bake for 15 minutes. Remove from oven and let cool. Cookies will be extra fragile when warm so be careful when moving them to a plate.
